Spiced Molasses Pumpkin Muffins

Hey there! As promised, I’m popping in to bring you a little update on one of our very favorite fall favorites. 💜 It just isn’t fall here without our Spiced Molasses Pumpkin Bread, but this year I turned that beautiful loaf of fall deliciousness into some pretty spectacular muffins. They came out so good, I had to share them with you.

Here’s a link to the original recipe which is awesome unto itself. It makes 2 loaves, which is never enough really, but today I halved the recipe and turned it into exactly 12 muffins (but now I wish I’d made the whole recipe). I didn’t have any applesauce on hand, so I substituted apple butter, which I may just do from now on because lordy, that just pretty much blew my mind.

So here’s what you do…just make up the batter and scoop it into a your greased muffin tins. Bake at 350 for about 20-25 minutes. Let them cool a bit and then you can spread them with butter or cream cheese or whatever. They will freeze beautifully so I encourage you to make a big batch and pull them out as needed.
