Avocado Fries
Thursday, July 1, 2010 at 3:20PM Oh dear. I never should have done this. This may be one of my biggest mistakes all year. Can’t take it back now.
So we’re totally enjoying our grilled avocados, but my husband innocently asks “What else can you do with avocados?” And so my daughter tweets this recipe, and I'm laying all the blame on them. Of course, I had to go and make them, and now we are doomed.
Sigh…. Avocado fries are good. They’re very, very good. So don’t even go there unless you’re willing to deal with that. Crunchy on the outside, soft and creamy on the inside… I dusted them with a little parmesan cheese, which was so unnecessary. But wow. We’re not so much down with frying stuff around here, but now I must have avocado fries. Must. Have. Them.
At a buck fifty a pop (at least around here), avocados can easily run up quite a tab on the grocery bill. Oh, who cares. We’ll do without napkins and wax paper or something. Avocado fries are here to stay.
So, consider yourself warned. I tried to tell you….

Recipe Adapted from Sunset Magazine
Canola oil for frying
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten to blend
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Grated parmesan for serving (optional)
1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.
2. Meanwhile, mix flour with 1/2 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates.
3. Sprinkle the avocado slices with the remaining ½ tsp salt. Dip each slice in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.
3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt and a little grated parmesan.

I'm intrigued..this sounds delicious!
Just made them... delicious!
Thanks for this wonderful idea.
I just had something similar at a Mexican restaurant. So decadent but so good.
I have a kinda luv hate relationship with avocados despite the fact they are so easily available here in Spain. Maybe I need to try your recipe as I'd never have thought of deep frying them & panko breadcrumbs are store cupboard essential in this household.
Thanks for the inspiration.
I can't wait to try these!
Ooh! Ooh! Ooh! Gotta try these. I've never met an avocado that I didn't like. Great post!
I've never seen anything like this! Patrice you're dangerous! I try not to fry either, but oh, what the heck!
oh wow. I think I agree that I don't think I should try these....I can see myself eating way, way, way too many of them :) They look and sound crazy good!
I tried avocado fries at a tapas restaurant here in NYC - they were slightly mushy on the inside, but very interesting. However your look crisp and delicious!!
kathy, http://www.healthy-happy-life.com
The secret to these fries is not to use over-ripe avocados. They really should be fairly firm, but not totally unripe. I don't mind if they're a little soft inside, but you definitely don't want them mushy!
Avocado fries... you did not... I can taste them already. YUM.
I can see how these would be addictive. What do you think about baking them? Would that work?
This is genius! Who would have thunk to fry avocados like this!? I fear that once I try them I will never stop eating them. But you know, it's a risk worth taking. ;)
Janna, I was actually going to try baking them next time. My idea is to spray them with cooking spray and bake them at a high temp (425) and see what happens. But I also have to say that I didn't deep fry mine. I put a little canola oil in my saute pan and got it really hot so it only took a couple minutes on each side. The panko didn't absorb hardly any oil that way. Let me know if you try baking them.
Not only do those sound delicious, they look maddd delicious too. Oh man are those a thing of beauty. I'm tempted to try them, but I might heed your warning and leave avocado fries to my imagination. :)
WOW. These sound absolutely incredible. What a great idea!
This is a great idea! I love fritters with panko coating, that makes delicious everything...but never thought to fry avocados...
These look seriously adictive, would you reccomend dipping in a regular mayo or maybe something with a bit of kick ;) ?
I was actually wondering that same thing. If I were to dip them in something, (and I'm not saying they need that), I would probably choose a medium-spicy salsa. I think that would be a nice counter to the creamy avocado and the crunchy exterior. Let me know if you try that. Sounds kinda good.
Wow! What a concept! Trader Joe's has some nice avocados and they aren't really expensive. Last time I bought a bag the checker told me I was buying "nature's band-aid"!
I absolutely know what you're talking about with Trader Joe's. When in California, I always buy mine there. Trader Joe's is coming to Omaha this year and you have no idea how excited I am about that (and being able to buy bags of avocados!). Nature's band-aid? I like that.
OMG, this looks like a dream and I am going to try it out!!
I'm thinking a chipotle aioli drizzled over them would be FANTABULOUS!! I can't WAIT to try these!! Thank you for the idea of frying avacado, as I can NEVER quite get enough!!
Chipotle aioli sounds about perfect! If you decide to do that, be sure and shoot the recipe our way! Thanks!
These sound great! I've been smoking my avacados lately but I'll definately have to try these.
Oh, wonderful! I love avocados! I always gobble them up greedily. This recipe looks so good that it should be against the law. I will definitely be making this! Thanks. :)
Patrice!
I am so excited to try these...they look wonderful:)
Great Blog, I found you on TasteSpotting!
The dinner I had planned for tonight was grilled chicken with roasted corn. My oh my does Avocado fries sound like it would go well with that! Thank you for the idea. I got your link from Taste of Home on Facebook :) I dare to say I'll be checking back in to see what else you concoct!
If I were to use EVOO instead of Canola, would that make a large difference?
I don't think it would make much difference. I didn't use much oil at all and chose canola because the flavor is lighter and it has a higher smoke point. It's important to get this oil hot so the fries don't absorb much. But if you use olive oil, let me know how it turns out.
I bet these are dangerous! I love avocado and these are calling my name.
as a californian we will use avocados on everything. However I've never tried deep fried avocados. Must go to my local mexican grocery store (where all the best avocados are) and try this asap...
Oh my goodness, I don't think I will be able to stop thinking about these until I make them!
What kind of implement did you use to transfer the fries to the oil and from the oil to the plate?
I used some tongs. There was only about 1/2 inch of oil in my pan and I just used the tongs to turn the fries until they were brown and crispy.
I would have never thought of trying this, but it sounds amazing. I love avocado!
Oh My! I'm seriously going to give these a try. I've grilled avocados and I love those, too.
I just made some of these and wow!!!! They are just amazing :) They are a little heavy but hey that just means you have to savor each one you eat. I'd have to suggest less salt and only one egg though, but that's just what I found. Thank you for this amazing recipe :)
I made them tonight. They were better with ketchup :)
Wow, I just saw your fries on thekitchn! One of my favorite blogs! Congrats to you! I knew this recipe was going to be a hit when i saw it... and then ate them for the next week. Awesome job!!!
Wow sounds delicious! I loveeeee avocados. A very unique idea that sounds worth the cost for sure!
I have NEVER fried anything in my life, but this looks good enough for me to give it a try! I'm thinking Ranch for a dipping sauce, but that may be a little too rich. I'll be serving these tomorrow with enchiladas, so maybe just a little fresh pico de gallo... can't wait! Thanks so much for the inspiration!
Just thought I'd post a little update on the whole dip idea. After trying a few different dips for these fries, we decided that we mostly loved a chipotle mayo dip. Just mix some mayonnaise in a blender with as many chipotle chiles in adobo sauce as you would like. Blend and serve. The adobo sauce really brightens and spices up the mayo and as it turns out, is perfect with these.
Baked works! Try wasabi ranch/mayo Yummy!
Thanks, Jason. I'll try that next time!!
I made a mix of mayo and salsa, and it's fantastic as a dip for these. There's a good chance that I'm going to eat all of these tonight. Anyone know if these will keep for a day or two? I've never fried anything before, so I don't know how this sort of thing works.
They reheat in the oven really well.
Wow I just came across these! They look so amazing. I have to try them!! Love the idea of cheese on top too. Thanks so much :)
First I come across Circle-Bs grilled avocados now these! Oh yes you are so evil, but a definite good evil that is.
Brilliant idea. I'd have never thought to fry avocado. The most I'd ever done was grill it or stuff avocado halves. I don't fry much but I'll give this a whirl for sure.
Thanks for sharing.
