Avocado Fries

Oh dear.  I never should have done this.  This may be one of my biggest mistakes all year.  Can’t take it back now.

So we’re totally enjoying our grilled avocados, but my husband innocently asks “What else can you do with avocados?”  And so my daughter tweets this recipe, and I'm laying all the blame on them.  Of course, I had to go and make them, and now we are doomed.

Sigh….  Avocado fries are good.  They’re very, very good.  So don’t even go there unless you’re willing to deal with that.  Crunchy on the outside, soft and creamy on the inside… I dusted them with a little parmesan cheese, which was so unnecessary.  But wow.  We’re not so much down with frying stuff around here, but now I must have avocado fries.  Must. Have. Them.

At a buck fifty a pop (at least around here), avocados can easily run up quite a tab on the grocery bill.  Oh, who cares.  We’ll do without napkins and wax paper or something.   Avocado fries are here to stay.

So, consider yourself warned.  I tried to tell you….   

Avocado Fries

Printable Recipe
Recipe Adapted from Sunset Magazine

Canola oil for frying
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten to blend
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges

Grated parmesan for serving (optional)

1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.

2. Meanwhile, mix flour with 1/2 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates.

3. Sprinkle the avocado slices with the remaining ½ tsp salt.  Dip each slice in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.

3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt and a little grated parmesan.

I have a kinda luv hate relationship with avocados despite the fact they are so easily available here in Spain. Maybe I need to try your recipe as I'd never have thought of deep frying them & panko breadcrumbs are store cupboard essential in this household.

I tried avocado fries at a tapas restaurant here in NYC - they were slightly mushy on the inside, but very interesting. However your look crisp and delicious!!

The secret to these fries is not to use over-ripe avocados. They really should be fairly firm, but not totally unripe. I don't mind if they're a little soft inside, but you definitely don't want them mushy!

Janna, I was actually going to try baking them next time. My idea is to spray them with cooking spray and bake them at a high temp (425) and see what happens. But I also have to say that I didn't deep fry mine. I put a little canola oil in my saute pan and got it really hot so it only took a couple minutes on each side. The panko didn't absorb hardly any oil that way. Let me know if you try baking them.

I was actually wondering that same thing. If I were to dip them in something, (and I'm not saying they need that), I would probably choose a medium-spicy salsa. I think that would be a nice counter to the creamy avocado and the crunchy exterior. Let me know if you try that. Sounds kinda good.

I absolutely know what you're talking about with Trader Joe's. When in California, I always buy mine there. Trader Joe's is coming to Omaha this year and you have no idea how excited I am about that (and being able to buy bags of avocados!). Nature's band-aid? I like that.

If I were to use EVOO instead of Canola, would that make a large difference?

I don't think it would make much difference. I didn't use much oil at all and chose canola because the flavor is lighter and it has a higher smoke point. It's important to get this oil hot so the fries don't absorb much. But if you use olive oil, let me know how it turns out.

as a californian we will use avocados on everything. However I've never tried deep fried avocados. Must go to my local mexican grocery store (where all the best avocados are) and try this asap...

What kind of implement did you use to transfer the fries to the oil and from the oil to the plate?

I used some tongs. There was only about 1/2 inch of oil in my pan and I just used the tongs to turn the fries until they were brown and crispy.

I just made some of these and wow!!!! They are just amazing :) They are a little heavy but hey that just means you have to savor each one you eat. I'd have to suggest less salt and only one egg though, but that's just what I found. Thank you for this amazing recipe :)

Wow sounds delicious! I loveeeee avocados. A very unique idea that sounds worth the cost for sure!

I have NEVER fried anything in my life, but this looks good enough for me to give it a try! I'm thinking Ranch for a dipping sauce, but that may be a little too rich. Just thought I'd post a little update on the whole dip idea. After trying a few different dips for these fries, we decided that we mostly loved a chipotle mayo dip. Just mix some mayonnaise in a blender with as many chipotle chiles in adobo sauce as you would like. Blend and serve. The adobo sauce really brightens and spices up the mayo and as it turns out, is perfect with these.

I made a mix of mayo and salsa, and it's fantastic as a dip for these. There's a good chance that I'm going to eat all of these tonight. Anyone know if these will keep for a day or two? I've never fried anything before, so I don't know how this sort of thing works.

Brilliant idea. I'd have never thought to fry avocado. The most I'd ever done was grill it or stuff avocado halves. I don't fry much but I'll give this a whirl for sure.
